cookbook(s)

In May of 2007 I self published my book The Damn Tasty Guide to Vegan Baking. It was published on a shoe-string and was a true labor of love- I spent 2 years working on it. At the end of 2007, I took a break from the cookbook and blogging to focus on some other things.

In the fall of 2008 I was approached by a publisher to publish a bigger, expanded and revised vegan baking cookbook in 2009. I accepted and began on a whirlwind baking journey. It felt great to be back at home in the kitchen. I revamped some of the recipes from Damn Tasty while developing at over 50 new recipes for the new book, which came out in fall of 2009.

    I absolutely love my copy of your book (which I won along with an apron!) and will definitely be eager to buy a new and expanded edition. My partner loves your lemon almond bling muffins but even though he’s pretty conservative about what he likes I’m sure I can coax him into trying new baked goods too πŸ™‚

    Hi Kris,

    I was wondering if you use a lot of tofu in your baking in the new book? I usually de-soy and de-gluten recipes, so I just wanted to check before I order

      Actually I can only think of a couple, primarily cheesecakes. Maybe 5? Out of 117, not too bad. πŸ™‚ Yes, it would be sad to order it and if tofu was my standard egg replacer. You should be good. πŸ™‚

    I just got your cookbook and I am loving it! I made the Chocolate Chip Pecan Cookies and wrote about them on my blog…is that okay? The Going, Going, Gone! Gingerbread is in the oven now and the house smells AMAZING! I can’t wait to dig in. Thanks for the great book πŸ™‚

      Ah, Kevin! I just found that error last week! Drat! It’s 2 teaspoons. I’ll be starting a page for errors on the site soon… hopefully not too many!

    I am making your pumpkin chocolate chip cookie. The recipe says to mix in milk but there is no milk listed in the ingredient list. I don’t know how much milk to put in so I guess I’ll just wing it. If you could let me know for future baking I would appreciate it. I checked the web site but I couldn’t find it there either. Thank you. I really like your book.

    Kris and others, I can’t seem to get the “You are My Sunshine Loaf” right. I omitted the raisins and walnuts but followed everything else exactly. Both times, the loaf was wet and gummy inside. I checked the oven temp with a thermometer, weighed the flour (12.5 ounces), and got a good rise, but the toothpick would never come out clean (always a little slimy). On my second attempt, I even added 45-55 minutes to the 55 minute baking time but the loaf still would not dry out inside. Any advice would be much appreciated. Kris, thanks so much for writing the book!

      Hi Bryan-

      I’m sorry you are having problems with this recipe. Honestly, I have had to increase the baking time myself and I seem to have problems with the apple. When I was originally working on the recipe I used Granny apples most of the time, now I’ve been using other varieties and I think they have more moisture inside. I would recommend grating more of a small sized apple (about 1/2 cup of apple) and reserving 1/2 cup of batter from the loaf when putting it in the pan. Let me know how that works and again, sorry! It’s weird to me that something can get tested so many times and then start to act up.

      Oh, and I also have good success making this recipe as muffins, I think the different sized volume bakes differently. But now I’m curious and I’m going to start digging through my old notes, I wonder if some of the amounts of things got fat-fingered in the editing process and some of the volumes are incorrect from my original recipes.

      Bryan, thank you for dropping a line about the recipe. When we went through the final round of edits on the book we had problems with some of the fraction measurements importing over, so now I’m concerned that when they did come over some of them aren’t right. Yikes! I will keep the ? page updated as I figure things out.

    Kris,

    I tried the You Are My Sunshine recipe also to see if my attempt would work out. I used a medium apple and squeezed out the excess water using cheesecloth so it ended up pretty dry. I also decided to try baking it in my breadmaker instead of a loaf pan. It still ended up gummy in the middle still but hey, it was a worth a shot!
